I was one of the writers assigned to contribute to the cover story in the summer 2022 edition of National Geographic Traveller Food magazine. A special report on Spain and the gastronomic treasures it offers visitors, I was asked to three editorial elements.

Given my extensive knowledge of the Spanish gastronomy sector I knew right away who to interview when my editor asked for a female chef who could speak about oranges from Valencia.
Vicky Sevilla, the youngest female chef in Spain to hold a Michelin star, has been quietly making waves from her restaurant Arrels in the Valencia region. I knew she had been nominated as the breakthrough chef of the year in 2019 and she has been garnering plaudits for some time. She was the perfect interviewee for this and spoke eloquently about growing up surrounded by orange orchards and the special place the citric fruit holds in Valencian and Spanish cuisine.
I also wrote a round-up of the best cooking school experiences in Spain along with a profile interview of Dabiz Muñoz, the avant garde chef behind DiverXo in Madrid and last year named the best chef in the world. I have previously interviewed Dabiz and he was the obvious choice when considering a chef who has played a crucial part in shaping what is the exciting gastronomic panorama of Madrid today.
